Since you have the equipment at home you can just get a power meter and measure the computer and a router to see which uses most power over two hours.
Make sure to install the baseline for the computer before the test so it is fairly representative
I get that, it was just something I noticed when looking to build a NAS a few months ago, I was considering the power usage over time when compared with a Synology, and I seem to recall the Synology being much more power efficient, and when I saw OP talking about using a full X86 machine for an AP, I just thought it sounded very inefficient.
Before you start with this project, consider the power use of a full X86 system even at idle and compare that to a standard router.
If you are looking to run this as an access point permanently, the cost of power may add up.
I am not saying that you shouldn’t do it, but take it into account before deciding.

My past role was a combined role of these:
Helpdesk technician
VIP technician
Linux system administrator
We didn’t effectively administrate the Linux environment, I was the only linux admin at the company, and I wasn’t even doing it full time.
In an ideal world I agree with you, but when resources are limited, running a separate environment is not allways realistic.

IT guy here, if we gave developers the option to exclude whatever the hell they wanted from AV scanning it would just mean that we would end up with computers where the entire C: drive would be excluded.
No, can’t have that.
So what should a decent IT department do to give developers the access they need to do their job while maintaining a decent level of security?
Well, the least bad solution I have worked with was to have a non generic path that was excluded by policy.
Something like C:\Excluded
The directory was excluded from AV scan and allowed in policy, the user could put what they needed there and it would be fine.

I have heard that some TVs attempt to connect to every WiFi they can find using default credentials even if you never connect it yourself
If you have a free PCIE slot, you can just get a SATA controller card.
I see other’s talk about an m.2 -> SATA adapter, but I just don’t see the point if you have a free PCIE slot
