Yes, Syncthing needs 2 diferents devices to sync, FreeFileSync syncronize whatever you want within 1 device, for example between 2 Disks or from a network disk to your computer disk.
Syncthing works great if there are 2 devices turned on and connected to a LAN or Internet, and FreeFileSync is totally disconected from the internet and only needs 1 device on (the one that execute it)
I use both, Syncthing to autosync all my devices and FreeFileSync to backup all those files to various disconected hard drives

I’m also interested in this, I use Syncthing for multi-device sync, but it’s not aimed for multi-directoy in a single device backup

Yes, the synchronization is in real time, and you can install it in Android and IOS devices (ok git can also be install but it’s more dificult). Also, you can have a lot of devices in constant sync without launching commands or touching any app, it works in background. I use both and they work perfectly for me.
Theres plenty of software designed to store personal wikis and info in markdown, of you are interested checkout Obsidian, Logseq and Jopling (in that order for me)
I also sync them with Syncthing and I store/backup them in a private GitHub repository, that allows me to access my notes on any device connected to the internet. All of this is compatible with Android and Windows platforms.
One thing that is designed to be future-proof is MarkDown, I’ve been taking profesional and personal notes and exporting important information from web pages to markdown and hosting it on my own PC for a while.
MarkDown it’s text based so you can have a huge amount of data with just a tiny bit of space. And it is easily translated/rendered as HTML. Apps like Logseq, Obsidian or Markor are good starts for managing huge vaults of information.
