You run a server for yourself. It can boot every day without issues. It can even hibernate while you sleep at 4am.
You can perform updates every day without issues.
You want to run everything in a container, docker, podman, or friends.
The host does not really matter, it’s all linux. Use the one that you are comfortable with. I chose fedora because I use the workstation. My second server is still on ubuntu. I won’t change it until I change the machine because it doesn’t matter that much. They are all stable.
I guess you are referring to the recent futo topic https://lemmy.ml/comment/16469376 I didn’t like it at first either, yet I understand his reasoning and kind of support it.
On reddit, I remember a fitness community that had very strict rules. Whatever wasn’t in line with what was supposed to be posted on that day got removed. At first, I hated it, but after a while I understood that it can be important to have a curated sub.
Maybe it should be highlighted that this is about freedom/ liberty?

I am about to do the same, yet I haven’t done it. As soon as I set it up I’ll share it with you but that could take some days/ weeks whenever I have the time. I don’t expect any difficulties in that setup. To me the most difficult part is to set up wg-easy
I stayed with podman compose. Do the quadlets specification have an advantage?
Fedora server has cockpit preinstalled. That’s what I use. With cockpit it’s very easy to adjust the firewall.
It’s not a direct solution to your problem but may show you what else is possible

My computer uses 1kwh per hour.
It does not yet make sense to me. It just feels wrong. I understand that you may normalize 4W in 15 minutes to 16Wh because it would use 16W per hour if it would run that long.
Why can’t you simply assume that I mean 1kWh per hour when I say 1kWh? And not 1kWh per 15 minutes.

That’s true. And the children of my family see no ads which is priceless. Yet I am looking into ways to cut costs in half by using an additional lower powered mini pc which is always on and the main computer only running in the evening - maybe.
Computer with gpu and 50TB drives. I will measure the computer on its own in the enxt couple of days to see where the power consumption comes from
If you are afraid someone gets access to your computer and then has a ready to use backdoor in that app and you can lose valuable prose, then use something different.
If not, what else are you worried about?
