I don’t use Docker, so this may not help you, but I find bpytop and ssh works just fine. :)

(Know that there’s some bullseye -> bookworm hicupps.)
Have you tried using an older kernel?
I had an issue simular to this and I needed to do was roll back the kernel.
Have a look on dmesq to see what’s going on as that may help.
(When you do recover, upgrade to bookworm. :)

In seriousness, have you consider using it as a DNS filter (Pi-Hole) or Samba share (32GB)?
I also could recommend running wireguard/openvpn, and Port Forward to the outside would for a secure connecton.
I used to be on testing (Bookworm) until they switched.
I mainly was on testing for newer packages.

It looks like Debian is exiting because of overwriting.
hplipclassdriver looks forign and isn’t shown on deps. Try removing it.
sudo apt purge hplipclassdriver
then try again.

I would like to inform you that Debian is a great choice!
If you whole intent is gaming, I recommend getting the Testing discs since Debian (Stable) apps can go outdated pretty quickly.
If you don’t mind older apps and such, then a standard disc should do just fine.
