Your best bet is probably contacting them. This can be done on this support page. Select ‘Inquiries Related to Your Privacy Rights’ and then under ‘What do you need assistsce with?’, go with ‘Request account deletion/deactivation’. Hope this helps!
I just noticed that the original watchtower hasn’t been updated in 2 years. I’ve never noticed before since it just works, but I guess it might stop working with some future docker update.
Not sure why this one is so interesting though. It’s mostly dependency updates so far.
